Vegetarian Recipe for Burrito with a side of Beans



Ingredients (makes one serving)

1 whole wheat flour tortilla
1/4 cup ground soy
1/2 can vegetarian refried beans
1 tomato
1/4 raw onion finely diced
2 leaves romaine lettuce (washed)
1/2 avocado sliced
hot sauce (optional)


Directions

Heat beans and ground soy in separate sauce pans over medium heat. Meanwhile, cut tomato and romaine lettuce into small pieces and set aside with the onions. Cook tortilla on the burner or microwave until desired texture. Place tortilla on a plate, add half the beans, the ground soy and all veggies and roll up. Place remaining beans on the side and drizzle with hot sauce if desired.
