Ingredients (makes one serving)
1 piece vegetarian chicken cut-let
1 medium russet potato
2 garlic cloves
3 tablespoons extra virgin olive oil
1 teaspoon parsley
seal salt and freshly ground pepper
Directions
Heat oven to 400F. Clean potato in water and cut into 1/2 inch squares. Place potatoes in an oven proof baking sheet and add 1 tablespoon olive oil, pinch of salt and pepper and mix together. Put in oven and cook for about 50 minutes. Meanwhile, peel garlic, finely chop and add to a mortal and mash until smooth. Add a pinch of salt and parsley and 2 tablespoons olive oil and blend together. Rub mixture all over chicken cut-let and place in the oven over foil for about 20 minutes. Place chicken cut-let on a plate with potatoes on the side.
