Vegan Recipe for Pan con Tomate



Ingredients

2 slices whole wheat bread
1 tomato
1 peeled garlic
1 tablespoons extra virgin olive oil
parsley
sea salt


Directions

Toast both pieces of whole wheat bread, cut garlic in half and rub on each bread. Slice tomato in half and rub over bread until most of the pulp is on the bread. Drizzle olive oil evenly on each bread, add a small pinch of salt to each bread, and add a generous portion of parsley to each bread. Eat open faced. A glass of Spanish red wine goes great with this.
